Sheet Pan Chicken Sausage



This is one of the easiest and most delicious weeknight meals I make on repeat! My kids love it and, surprisingly, eat their veggies with this. Well, all but the little one but he doesn’t count because he doesn’t eat anything that doesn’t come in a box.

I hope your family enjoys this as much as ours!

INGREDIENTS

4 Chicken Sausage Links, halved and sliced in 1/4” half rounds

1 Bunch asparagus, cut into thirds

1 red bell pepper, cut into chunks

1/2 red onion, cut into chunks

1 sweet potato, peeled and cubed

1 zucchini, halved and sliced into 1/4” half rounds

1 - 2 TBS avocado oil (or oil of choice)

1 TBS italian seasonig

Salt

Pepper

DIRECTIONS

Preheat oven to 425.

Cover a rimmed sheet pan with foil. (This is an optional step but makes cleanup so much easier!) Throw all chicken sausage, asparagus, bell pepper, onion, sweet potato and zucchini in that pan and give a quick stir to even them out in one layer. It’s okay if they’re touching because everything will shrink up a bit when you start to roast it. Stir in oil, seasonings and salt and pepper.

Roast 30 - 40 minutes, stirring every 15.

Boom. Easy dinner.
