Biscuit Bombs Two Ways



When we visited NYC in the fall, we only repeated two restaurants that we had simply LOVED from our previous trip. One was Sarabeth's Bakery and the other was The Tipsy Parson.

The Tipsy Parson has an incredible brunch menu and I got a different variation of my favorite thing - the Biscuit Bomb. You can choose to put whatever you like in there but basically it's a stuffed biscuit with all things brunchy goodness served with a jalapeño jelly which makes this Texas Momma all sorts of crazy happy.

So when my friend and I were talking about a calzone biscuit she had made off of a pinterest recipe I thought back to the best brunch ever and how I could possibly mimick that at home! Thus the Homemade Biscuit Bombs were made. Even though these will never compare to the biscuit bombs from The Tipsy Parson, they will tide me over until my next visit.


SPICY SAUSAGE + CREAM CHEESE

INGREDIENTS :

1 can refrigerated biscuit dough

1 block of cream cheese, cubed

12 ounces Spicy Breakfast Sausage

1 cup cheddar cheese

1/2 tsp Red Pepper Flakes, Optional

1/4 cup melted butter

Chopped parsley for garnish

DIRECTIONS :

Heat oven to 350.

Cook sausage in large skillet until almost fully browned. Drain and return to hot pan.

Throw in cubed cream cheese and cheddar cheese and stir until this melty heavenly goodness comes together. Add red pepper flakes if desired.

Separate biscuits out and either use a silipat or grease a rimmed baking sheet.

Flatten biscuits into rounds and then put a heaping spoonful of cream cheese / sausage filling into the middle of the round. Carefully wrap the biscuit around the filling forming a ball and pinch the seams together. Place the ball onto baking sheet with the seam side down. Repeat with remaining biscuits, spreading about two inches apart. Brush with melted butter.

Bake for 12-18 minutes, until browned and fully cooked through. Sprinkle with more red pepper and parsley if wanted.


EGG, SAUSAGE + CHEESE

INGREDIENTS :

1 can refrigerated biscuit dough

6 eggs, scrambled

12 ounces Spicy Breakfast Sausage

1 cup cheddar cheese

1/4 cup melted butter

Salt and Pepper to taste

Chopped parsley for garnish

DIRECTIONS :

Heat oven to 350.

Cook sausage in large skillet until almost fully browned. Drain and return to hot pan.

Throw in scrambled eggs, cheddar cheese and salt and pepper. Stir until the cheese melts and it all comes together.

Separate biscuits out and either use a silipat or grease a rimmed baking sheet.

Flatten biscuits into rounds and then put a heaping spoonful of egg and sausage filling into the middle of the round. Carefully wrap the biscuit around the filling forming a ball and pinch the seams together. Place the ball onto baking sheet with the seam side down. Repeat with remaining biscuits, spreading about 2 inches apart. Brush with melted butter.

Bake for 12-18 minutes, until browned and fully cooked through. Sprinkle with more freshly cracked pepper and parsley if desired.
