I'm not quite sure what made me think about trying this - but I am oh so glad that I did. You will be thanking me for weeks after you make these little guys for your next brunch get together.
In fact - writing about brunch makes me think that we need to host brunch more often after church on Sundays.
Ingredients
makes roughly eight sandwich halves
1 Batch waffles from your favorite mix
8 slices peppered bacon, fried until crispy
6 Eggs
Shredded cheddar cheese
Salt
Pepper
1/4 tsp Garlic Powder (optional)
4 TBS Butter
6 wedges Laughing cow herb and garlic cheese (you could also use cream cheese)
Chopped fresh parsley (optional)
Syrup (optional, but HIGHLY recommended!)
Directions
Whisk eggs into a bowl and get the cheddar cheese ready. Scramble eggs, adding garlic powder and then salt + pepper to taste. When they are almost set, throw in your cheddar cheese and mix until all melted and yummy looking.
Heat up a griddle or large skillet. As it begins to warm, add 1 - 2 TBS butter to coat the pan.
Meanwhile, spread laughing cow cheese on one side of two waffles. Create a sandwich by adding scrambled egg mixture and two sides of bacon, topping with the other waffle. Repeat with remaining waffles.
Add your waffle sandwiches to the buttered and hot griddle, pressing down on the top with a flat spatula (or a skillet), creating a "press". *If you have a panini press, you could use that here too.
Press for 2-3 minutes, flip and repeat. Cut sandwiches in half, top with chopped parsley and a drizzle of syrup. Enjoy.
